A national dish of Bahrain in which spiced rice is combined with chicken, lamb or seafood. Fragrant with dried lime called 'loomi', cardamom and cinnamon, it is finished to a deep flavour with onion and tomato. A leading example of Gulf cuisine influenced by Persia and India, it is served on a large platter at home and at celebrations for people to gather round and enjoy.
