Jaibo / Pandanus
About
A food made from the fruit of the pandanus tree that represents the traditional diet of the Marshall Islands. The orange, cluster-like fruit is boiled or roasted and the flesh sucked from it, enjoyed for its sweet, faintly fibrous taste. The pulp is sometimes cooked down into a preserved food, and as a staple of the island alongside coconut and breadfruit, it is deeply rooted in daily life and festivals.
