About
A kind of large swamp taro grown in marshy pits, indispensable as a staple of Tuvalu. Carefully cultivated in dug-out garden pits, it has long sustained the island's food culture. Since it cannot be eaten raw, it is slowly cooked in an earth oven and prepared with coconut cream. Marked by a chewy texture and faint sweetness, it is also served at celebrations, a dish rooted in island life.
