A signature Fijian fish dish: fresh white fish 'cooked' in lime or lemon juice, then dressed with coconut milk and served cold. Using the South Pacific method of curing raw fish in citrus acid, it is refreshed with onion, tomato and chilli. The mellowness of coconut blends with the fish's savour for a bright taste perfectly suited to the hot island climate.
