About
A signature local dish of Monaco: small parcels of thin dough filled with chard, ricotta and the like, then fried until golden. With a rustic flavour combining vegetables and cheese typical of the Mediterranean coast, they are crisp outside and moist within. Appearing at festivals and family tables and enjoyed as a starter or snack, they are an emblem of this small state's cuisine.
