A traditional dish considered Brunei's national food, made by kneading sago-palm starch with hot water. The flavourless, translucent, glue-like mass is wound onto a two-pronged bamboo fork called 'chandas' and dipped in a tangy durian or fish sauce. Custom has it swallowed rather than chewed, and it is a humble, warming dish shared from a communal pot among family and friends.
