A meat dish that can be called Botswana's national food, in which beef or goat is simmered slowly in nothing but salt and shredded fine once tender. It is marked by rustic cooking that brings out the ingredient's own flavour, and it is made in a large pot for festivals, gatherings and other occasions where people come together. It is typically eaten with the cornmeal stiff porridge 'pap' or with sorghum porridge.
