A signature home dish of Congo: finely chopped cassava leaves slowly stewed with palm oil, onion and sometimes dried fish or smoked meat. Marked by a slight bitterness and a rich, deep flavour, it is eaten with the cassava-dough staple 'fufu', rice or fried plantain. Nourishing and full of nutrients, it is a national taste indispensable to people's tables.
