A classic Andean highland soup in which potatoes are simmered until they break down into a creamy consistency. It is usually enriched with milk and cheese and served with avocado. Beloved as a home dish that warms the body in cool, high-altitude Quito, it is a rustic plate that brings out the rich flavour of the potato, often accompanied by a spicy sauce called ají.
