Zigni with Injera
About
A spicy stew representative of Eritrea, in which beef or lamb is simmered with berbere, a blend of chilli spices. It is served atop injera, a slightly sour flatbread made by fermenting and baking the grain teff, and eaten by tearing off pieces to wrap the fillings by hand. Embodying the table culture of sharing a large platter with family and friends, it is a dish to savour on the road.
