Kelaguen
About
A signature Chamorro dish in which finely chopped chicken, shrimp or fish is 'cooked' in lime juice and tossed with grated coconut and chilli for a refreshing result. Tang, heat and the richness of coconut harmonise, suiting the hot island climate well. It is typically eaten with 'titiyas', a cornmeal tortilla, and is a must at festive gatherings.
