Masgouf
About
Iraq's national dish, in which freshwater fish caught in the Tigris is split open, seasoned with salt and lemon, and slowly grilled propped up beside a wood fire. The skin turns crisp and fragrant while the flesh stays tender. Finished with tomato and onion and often served at riverside restaurants, it is cherished as a signature taste of Baghdad.
