Ackee and Saltfish

Jamaica's national dish, a breakfast staple of the island's national fruit, ackee, sautéed with salted cod. Well-ripened ackee turns yellow and fluffy like scrambled eggs, and combined with onion, sweet pepper, chilli and spices it draws out saltiness and savour. Served with fried dumplings, boiled bananas or breadfruit, it is a plate that colours the start of an island day.
