Thieboudienne
About
A hearty dish widely eaten across West Africa, in which rice is cooked with fish and tomato sauce. In Ségou, blessed by the Niger River, river fish is used and set off with vegetables such as cassava, carrot and eggplant. The custom is to share it from a large platter with hands or spoons, and it is a signature local dish uniting the river's bounty and the fruits of the land.
