A staple indispensable to Malawi's tables, made by kneading maize flour with hot water. The basic way to eat it is to tear off the white, chewy dough by hand and pair it with stewed leafy greens, beans, fish or meat. Bland and matching any side dish, it symbolises the everyday meal families share around a plate. Eaten several times a day locally, it is a dish at the centre of daily life.
