Calulu
About
A stew widely loved in São Tomé and Príncipe, in which fish or meat is simmered slowly with many leafy greens, okra, tomato and palm oil. It is characterised by a deep flavour where the ingredients' savouriness melds together, and the reddish oil and green vegetables make it appetising. Typically eaten with rice or boiled banana, it is a signature island dish served both at home and at celebrations.
