Fufu
About
A staple eaten widely across West Africa, made by boiling and pounding yam or cassava into a smooth, dough-like mass. It is typically torn off by hand and dipped in thick sauces of groundnut, leafy greens, meat or fish, and eaten by swallowing rather than chewing. Simple yet filling, it is a centrepiece of the table for welcoming family and guests.
