A signature Azerbaijani rice dish in which saffron-tinted rice is combined with lamb or chicken, dried fruit and chestnuts. It is distinctive in that the rice and toppings are cooked separately and arranged together when served, and a thin dough called 'gazmag' is often laid at the bottom of the pot to form a moist, golden crust. The star of celebrations, it comes in many regional varieties.
