Beshbarmak
About
A traditional dish of nomadic origin emblematic of Kyrgyzstan, whose name means 'five fingers'. Boiled mutton or horsemeat is chopped fine and combined with wide flat noodles, dressed with an onion-rich broth and eaten by hand. A special plate served at celebrations and for welcoming guests, it harmonises the savour of the meat with rustic noodles, carrying the food culture of the great steppe to this day.
