Mumu

A traditional steam-bake of the Papua New Guinea highlands, using a pit dug in the ground and heated stones. Pork, sweet potato, taro and leafy greens are wrapped in banana leaves and slowly steamed underground together with the hot stones. A deeply savoury dish infused with the sweetness of the ingredients and a faint stone aroma, it is a symbol of communal eating, shared among people gathered at festivals and celebrations.
