About
A dish of fish and rice, often called Senegal's national food. Fish is simmered in a tomato-based sauce, rice is cooked to absorb its flavour, and vegetables such as carrot, cassava and aubergine are added. Said to have originated in Saint-Louis, it is traditionally eaten by the family gathered around a large platter. Colourful and uniting the gifts of sea and land, it is a taste of the region.
