Khorkhog

A hearty dish emblematic of Mongolia's nomadic culture, in which meat is steam-roasted with heated stones. Mutton and vegetables are placed in a metal container and cooked sealed together with fire-heated stones. The stones' radiant heat cooks it slowly, leaving the meat tender and drawing out the ingredients' natural flavour. Made for special gatherings and to welcome guests, holding the hot stones in one's hands is said to bring good fortune.
