About
A signature Puerto Rican dish in which fried green plantains are mashed with garlic and pork fat, then shaped into a mound or bowl. Crispy pork skin called chicharrón is often mixed in for savour and richness. A hollow in the centre is frequently filled with shrimp, chicken or a garlic sauce. With a cooking method rooted in West Africa and developed in its own way on the island, it has a hearty flavour.
